- • Spinach
- • Olive oil

Steps

Heat 1 tsp olive oil in a non-stick pan over medium heat.

Add a large handful of spinach and cook for 1–2 minutes until wilted.

Pour in 4 egg whites plus 1 whole egg, beaten, with a pinch of salt and black pepper.

Scramble gently over low heat for 2–3 minutes until just set. Serve warm.
