Garlic tomato baked cod

Light white fish baked in a simple cherry tomato and garlic sauce.
Ingredients
- • Cod
- • Cherry tomatoes
- • Garlic
- • Olive oil
- • Oregano
- • Lemon
- • Salt
- • Black pepper
Steps
- 1.
Preheat the oven to 190°C. Place 2 cod fillets (about 150g each) in a small baking dish.
- 2.
Add 200g cherry tomatoes, 3 sliced garlic cloves, 1 tbsp olive oil, 1 tsp dried oregano, salt, and black pepper.
- 3.
Bake for 15–18 minutes until the cod is opaque and flakes easily.
- 4.
Serve with a squeeze of lemon.
