Healthy Sweet & Sour Chicken

Diced chicken with peppers, spring onion, and a simple homemade sweet and sour sauce.

- • Soy sauce

Steps

Toss 500g diced chicken breast with salt, black pepper, and 1 tbsp cornflour (optional, for a light coating).

Cook in a large pan with 1 tsp oil for 5–7 minutes until browned. Remove the chicken and set aside.

Cook red pepper, yellow pepper, onion, and spring onion for 4–5 minutes.
- 4.
Mix 4 tbsp ketchup, 2 tbsp soy sauce, 2 tbsp honey, 2 tbsp vinegar, and 4 tbsp water in a bowl.
- 5.
Return the chicken to the pan, pour in the sauce, and cook for 2–3 minutes until everything is coated and the sauce thickens slightly.
