Lemon & herb baked salmon

Oven-baked salmon with lemon, garlic, and dill, served with tender broccoli.

  • • Lemon
  • • Olive oil
  • • Garlic
  • • Dill
  • • Salt
  • • Black pepper
  • • Broccoli

Steps

  1. 1.

    Preheat the oven to 200°C. Place 2 salmon fillets (about 150g each) on a lined tray.

    Drizzle with 1 tbsp olive oil, juice of 1 lemon, 2 crushed garlic cloves, 1 tsp dried dill, salt, and black pepper.

    Toss 300g broccoli florets with 1 tsp olive oil and a pinch of salt on a second tray.

  4. 4.

    Bake salmon and broccoli for 12–15 minutes until the salmon flakes easily and the broccoli is tender.

    Serve the salmon with the broccoli and an extra squeeze of lemon.
